This rich, traditionally crafted Étouffée sauce has a velvety base, medium dark roux and loads of fresh green vegetables. We don’t add tomatoes but you can. Add any shellfish (crayfish, shrimp, crab, or lobster meat) or chunked fish to boiling Etouffee. Fish is delicate; cook only until done, 1- 3 minutes, taking care not to overcook.
Delicious with rice, pasta, potatoes, or other grains. Garnishes may include minced green onion, bacon, a splash of sherry or all of the above. This hearty stew like meal can stand up to meat and fowl so add sausage and chicken as well as seafood if that suits your taste.
Etouffee ( ay-too-fay) is a dish found in both Cajun and Creole cuisine. A Louisiana french word, Etouffee means to stew or smother. Have ever wondered about the distinction between Cajun and Creole?

Cajun originates specifically from the Acadiana region of Louisiana. An authentic Cajun meal is a three-pot one, with one pot dedicated to the main dish, Etouffee, Creole, or Gumbo; made special with the addition of sausage or some type of seafood. Pot two is dedicated to steamed rice, and the third contains whatever vegetable is plentiful or available.
You may substitute french bread or cornbread for the rice and a green salad for the vegetables. The fish or shellfish you cook in your Etouffee will soak up the complex sauce and result in a scrumptious medley of flavor. Enjoy!
